Baked Oatmeal Carrot Cake Version

DH loves baked oatmeal so I am always looking for new ways to make it. This is my version of a recipe I fond on the internet. *10 minute cool time not included.
Ingredients:
2 cups rolled oatmeal (not instant)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup 1% low-fat milk
1/2 cup egg beaters egg substitute
1/2 cup unsweetened applesauce
1/8 cup splenda brown sugar blend
1 teaspoon vanilla extract
1 tablespoon cinnamon
1 -1 1/2 cup carrot, shredded (2 carrots)
8 ounces crushed pineapple
1/4 cup raisins
yogurt or milk, for topping
Directions:
1. Combine wet ingredients.
2. Add dry ingredients.
3. Bake in sprayed 8 pan at 350 for 35-45 minutes.
4. Let cool about 10 minutes to set-up a bit before serving.
5. Serve with yogurt or milk.
