A portable oatmeal that tastes like a mildly sweet cake. 130g is about 200 C
Ingredients:
1 cup oatmeal, old fashioned oats
1 cup oat bran
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
2 whole eggs
1/2 cup yogurt, plain, fat free
1 cup skim milk, fat free
1/2 cup applesauce, unsweetened
1 tsp. cinnamon
2 tsp splenda
1 1/2 tsp. vanilla extract
Directions:
1. Preheat oven to 350 degrees
2. Spray 8X8 glass pan with non-stick spray
3. Combine first ingredients.
4. Hand-blend all additional ingredients.
5. Add wet ingredients to dry, stir, and put into pan and into oven immediately.
6. Cook for 25-30 minutes, or until top is golden brown and oatmeal feels firm to the touch.
7. Cool for a few minutes and then turn out of the pan onto a cooling rack. Serve warm or cold.
