This baked oatmeal tastes similar to an oatmeal cookie! (Requires overnight preparation)
Ingredients:
1/2 cup vegetable oil
3/4 cup white sugar
2 eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
3 cups quick-cooking oats
1/2 cup raisins
1 apple, peeled,cored,and chopped
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Directions:
1. Beat together oil and sugar.
2. Mix in eggs, milk, salt, baking powder, and oatmeal.
3. Beat well then stir in raisins and apples.
4. Pour into a lightly greased pie pan.
5. Sprinkle with brown sugar and cinnamon.
6. Refrigerate overnight.
7. In the morning, preheat oven to 350 degrees.
8. Bake until firm, about 35 minutes.
9. Serve warm.
