Baked Mussels In Buttered Garlic And Spices

Ingredients:
2 lb. mussels, boiled, half shell removed
6 cloves garlic, finely minced
1 sprig parsley, finely minced
1/4 cup butter, room temp
quick melt cheese, cut into squares
salt and pepper to taste
Directions:
1. 1. Boil mussels for 5 minutes or until shells are open. Remove the other half of the shell.
2. 2. Melt butter into a sauce pan under low heat.
3. 3. Add garlic, parsley, salt and pepper.
4. 4. Arrange the mussels in a baking pan.
5. 5. Top each mussel with half teaspoon of the butter mixture and then the quick melt cheese.
6. 6. Bake for 5 minutes!
