Baked Lentils

A comforting winter dish.
Ingredients:
2 cups brown lentils (type that does not require soaking)
2 onions
2 tomatoes
2 garlic cloves, chopped
1/2 cup chopped parsley
1 cup white wine
1 cup vegetable stock
1 teaspoon good curry, mixture
1 pinch salt
1 pinch ginger
1/2 cup dried peaches, chopped & soaked
1/2 cup dried apricot, chopped & soaked
1/2 cup raisins or 1/2 cup sultana, soaked
1/2 cup garden peas, cooked & pureed
2 tablespoons plain yogurt
2 eggs
3 tablespoons milk
Directions:
1. Rinse lentils, add water, wine& salt.
2. Bring to boil.
3. Add curry, ginger, tomatoes, garlic& onions.
4. Cook till lentils are soft.
5. If water is needed add little at a time, so draining is not necessary.
6. Remove from heat.
7. Add all dried fruit, yoghurt, peas& parsley.
8. Put mixture in oven dish.
9. Beat eggs with milk and pour over.
10. Bake at 180°C until golden on top.
