A different take on the usual frozen/fried jalapeno poppers!
Ingredients:
5 large jalapenos, cut in half lengthwise and seeded.
sharp cheddar, grated ..eyeball it.
goat cheese (chevre), crumbled ... eyeball it.
cream cheese, softened ...eyeball it.
approx. 6 strips of bacon, cooked and crumbled
1/2 c plain panko bread crumbs
2 tbs butter, melted
Directions:
1. Preheat oven to 375 F.
2. In a small-medium bowl, mix cheeses and bacon and put aside.
3. After jalapenos are cleaned, use a teaspoon to fill each boat with enough cheese and bacon mixture to be even with the edges of the pepper.
4. Melt butter and add to the panko, mixing thoroughly.
5. Take each popper and dip face-down into the panko, so that the cheese mixture is now covered in buttery bread crumbs...drooooollll.....
6. Bake for approximately 25 minutes, or until cheese is melty and the breadcrumbs are browned. If cheese melts before the breadcrumbs brown, stick the pan under the broiler for a moment or two until desired effect is reached.
