Baked Ham With Orange and Lime

This recipe calls for an unsmoked ham called gammon. The ham is first boiled until cooked, then coated in a citrus glaze and roasted. The tartness and spiciness of the glaze form a delicious contrast to the sweetness of the ham. Serve with plain rice and black beans.
Ingredients:
4 1/2 lbs ham (unsmoked)
1 orange
2 limes
1 bay leaf
3 fresh parsley sprigs
6 black peppercorns
5 garlic cloves, crushed
1 tablespoon dried oregano
2 hot red chili peppers, seeded and minced
2 tablespoons brown sugar
fresh ground black pepper
Directions:
1. Place ham in a large saucepan and cover with cold water; add the zest from one orange, 1 lime, bay leaf, parsley, and peppercorns.
2. Bring to a boil, over high heat; cover, reduce heat to a simmer, and cook 2 hours.
3. Preheat oven to 425 degrees F.
4. Once ham is cooked, allow to let cool to touch, remove from pan, then transfer to a cutting board; pull off the skin, but leave the fat on the meat.
5. Combine garlic, oregano, chilies, juice of 1 orange, juice of 2 limes, and sugar in a bowl; season with black pepper.
6. Rub all over ham, roast in oven until golden, about 20 to 25 minutes.
7. Slice ham and serve.
