Ingredients:
6 oz. goat cheese, sliced into 8 rounds
1/2 cup walnuts, toasted and finely chopped
4 cups fresh baby greens, washed and patted dry
blueberry balsamic glaze
1/4 cup blueberry syrup
2 tbsp. balsamic vinegar
1 clove garlic, minced
2 tbsp. extra-virgin olive oil
1/4 tsp. salt
1/4 tsp. freshly ground black pepper
Directions:
1. To make the glaze, combine the Blueberry syrup with the balsamic vinegar and garlic. Whisk in the olive oil and season to taste with salt and pepper.
2. Coat the Goat Cheese rounds on all sides with the nuts. Refrigerate until ready to serve.
3. Place cheese on a baking sheet and set in a 350F. oven for 10 minutes.
4. Divide the Greens between four plates and top each with a couple of rounds of cheese.
5. Drizzle with the glaze.
6. Enjoy!
