Baked French Toast

A delicious breakfast that the whole family will love.
Ingredients:
1 cup lite maple syrup (i used sugar-free pancake syrup)
6 slices of french bread, 2 thick
3 large eggs
1 1/2 cups of skim milk
2 tablespoons of vanilla extract
1/2 teaspoon each, ground cinnamon, cloves, ginger
fresh ground nutmeg to taste
Directions:
1. Prepare large baking dish with cooking spray or oil rub.
2. Pour syrup in bottom of dish.
3. Arrange bread slices on top of syrup.
4. Combine eggs, skim milk, vanilla extract and spices in a medium bowl and whisk until well blended.
5. Pour mixture over break slices, generously soaking bread.
6. Cover with plastic wrap and refrigerate overnight.
7. To prepare and serve:
8. Preheat oven to 350 degrees.
9. Bake French Toast Casserole for 40-45 minutes or until golden brown. Serve with additional syrup if necessary and more fresh ground nutmeg. NOTE: we did not find the need for extra syrup.
