Baked Fiesta Salsa

Ready, Set, Cook! Special Edition Contest Entry. Potato casserole with salsa items in it and baked. One of those rare combinations that can serve as any meal and stretched with added items like a fried egg on top of a serving.
Ingredients:
1 cup chicken broth
1 (1 1/4 ounce) package taco seasoning
1 (8 1/2 ounce) can whole corn (drained not rinsed)
1 (3 1/2 ounce) package sun-dried tomatoes (dried ones, not in oil)
1 (20 ounce) simply potatoes diced potatoes with onion (4 servings)
2 (15 1/4 ounce) cans black beans (drained not rinsed)
1/4-1 red bell pepper (diced, added for color or to taste)
1 bunch green onion (sliced for placement upon serving)
1 cup cheese
1 cup sour cream
Directions:
1. Process into a sauce (mini food processor): chicken broth, taco seasoning, sundried tomatoes.
2. Mix all ingredients (except green onions) thoroughly.
3. Pour into a greased baking pan or individual serving bake pans.
4. Cover with foil.
5. Bake at 425 F for 30 minutes, less for individual servings.
6. Stir.
7. Sprinkle cheese and green onion on top of a dallop of sour cream to serve!
8. Makes 4-8 servings, depending on if used as a snack, side or meal.
