Baked Eggs and Basil

Great for breakfast or a snack.
Ingredients:
3 tablespoons margarine
2 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup snipped fresh basil or 1 teaspoon dried basil
1 cup milk
4 eggs
salt and pepper
Directions:
1. In a a small saucepan melt the margarine.
2. Stir in the flour, salt, pepper and dried basil (if using).
3. Add milk all at once.
4. Cook and stir over medium heat till thickened and bubbly.
5. Cook/stir one minute more.
6. Remove from heat.
7. Stir in fresh basil (if using).
8. Coat custard cups with margarine.
9. Spoon about 2 Tablespoons basil sauce into each dish.
10. Gently break an egg into the center of each dish.
11. Season with salt and pepper.
12. Spoon remaining sauce atop eggs.
13. Bake in a 350 degree oven for 18-20 minutes or till egg is set.
14. Garnish with snipped basil if desired.
