This is a fun quick classic, I like to use blue or gorgonzola rather than cheddar, but smoky cheddar is also good. Any cheese you use should be crumbled fine or shredded very fine to make a nice batter. Also, try the olive or anchovy or onion stuffed olives for a change. Can be made ahead and frozen, then just bake and serve. Doesn’t have to be served hot, but like at least warm if possible. Still a favorite !!
Ingredients:
1 cup gorgonzola, crumbles finely chopped (or your favorite shredded cheese)
1 cup bisquick
5 ounces anchovies, onion or 5 ounces pimento stuffed green olives
1/4 cup melted butter
1/8 teaspoon cayenne
1/2 teaspoon worcestershire sauce
1/2 teaspoon ground black pepper
Directions:
1. Crust - Mix the Bisquick, butter, cheese, cayenne, Worcestershire and pepper and make a crust.
2. Olives - Drain the olives and pat dry. This is important for the crust to stick on the olives. Heat the oven to 400 and preheat while you make the olive balls. Form small balls (a bit bigger than the olives you are using) of the cheese crust and make an indentation and insert the olive. Use your hand to round the crust around the olive so the olive is completely inside.
3. Bake - Now, just bake on a un-greased baking sheet for 10-12 minutes until golden brown. Serve and enjoy!
