These baked clams are delicous- the key is the pancetta, found in Itaiian food markets -or in some super markets
Ingredients:
2 doz littleneck clams,(( soaked in 1 2 tsp of salt, and i tbsp of cornmeal or flour for at least 3 hours or overnight))
topping.
i tbsp of olive oil
2 cloves of garlic minced
4 to 8 tbsp of flavored italian bread crumbs
2 tbsp of roasted red pepper
2 tbsp of fresh parsley chopped
2 tbsp of finely chopped pancetta
dry white wine
fresh lemon wedges
Directions:
1. RINSE AND SCRUB THE CLAMS,-CUT OPEN, SAVE THE SHELLS AND SAVE THE JIUCES,-STRAIN THE JIUCES AND
2. ADD TO THE MIXTURE BELOW.
3. IN A BOWL MIX TOGETHER ALL THE INGREDIENTS EXCEPT THE WHITE WINE,ADD THE BREAD CRUMBS A LITTLE AT A TIME TILL YOU GET SOMETHING THAT LOOKS LIKE A MEAT BALL NOT TOO WET NOT TO DRY-
4. SPOON THE MIXTURE ONTO THE CLAMS SPRAY WITH THE WHITE WINE AND PUT IN THE BROILER,-
5. AND BROIL TELL DONE 5 TO 8 M[N.'S,- SERVE HOT WITH LEMON WEDGES.
