Ingredients:

Directions:

  1. Cut chicken strips across the grain in thin slices. Set aside.
  2. In medium mixing bowl, add eggs, oil, chili powder, ground cumin, salt and paprika.
  3. Add optional diced peppers if desired. Whisk until mixed.
  4. In separate bowl mix flour and baking powder.
  5. Add into egg mixture and add milk. Mix with spoon. Batter will be sticky and texture like peanut butter.
  6. Preheat oven 400°.
  7. Spray Pam on baking pan.
  8. Coat each slice or strip with batter.
  9. Place on pan.
  10. Bake 12 minutes. Take out of oven.
  11. Turn the strips over. Bake 5 more minutes.
  12. They will be flat on one side.
  13. Serve with puffy side up.
