Baked Chicken Nuggets

Ingredients:
16 ounces boneless skinless chicken breasts (cut into nuggets)
2 teaspoons olive oil
6 tablespoons seasoned breadcrumbs
2 tablespoons panko breadcrumbs
2 tablespoons grated parmesan cheese
salt and pepper
cooking spray
Directions:
1. Preheat oven to 425 degrees and grease a cookie sheet with the cooking spray.
2. Place olive oil in a bowl and in another bowl mix the breadcrumbs, panko, and cheese together.
3. Season chicken with salt and pepper.
4. Toss the chicken in olive oil completely.
5. Next toss the chicken in the breadcrumb mixture.
6. Place coated chicken on the cookie sheet.
7. Spray the chicken with cooking oil.
8. Cook for 8 - 10 minutes.
9. Turn chicken over and cook for another 4 -5 minutes until cooked thoroughly.
10. Serve with your favorite dipping sauce.
