When I first got married, I never knew what to make for everyday supper. I went crazy searching through cookbooks for tasty simple recipes. I still remember my husband and stepson saying This one's a keeper! the first time I made this. I still make this one on a regular basis. I never grow tired of it. It always tastes like a nice home cooked meal! I have varied the recipe from time to time with pork chops (used cream of mushroom soup instead of chicken) and even chicken thighs instead of breasts. The original recipe came from a cookbook that raised money for my church.
Ingredients:
2 lbs boneless chicken breasts
1 lb swiss cheese
2 -3 cups cornbread stuffing mix
2 (10 1/2 ounce) cans cream of chicken soup
1/2 cup butter, melted
bacon bits (to garnish) (optional)
Directions:
1. Place uncooked chicken in baking dish. Layer Swiss cheese over chicken. Add soup (Do NOT dilute).Spread stuffing mix over chicken. Sprinkle bacon bits over the stuffing if so desired. Drizzle butter over top.
2. Bake in 350 degrees oven, covered with foil for 1/2 hour. Uncover and bake 1/2 hour more.
