Ingredients:
1 lb boneless, skinless chicken breast
1 cups brown rice
2 cups non-fat low-sodium chicken broth
2 tablespoons non-fat sour cream
1 teaspoon worcestershire sauce
Directions:
1. Measure dry brown rice into casserole dish
2. Whisk broth, non-fat sour cream and worcestershire together in a small bowl; pour into casserole.
3. Cut chicken breast into smaller pieces; place in liquid in casserole. Cover with foil.
4. Bake in 400 degree oven for 45 minutes to an hour, or until liquid is absorbed.
5. Serve with sauteed or steamed vegetables.
