I not sure where this recipe came from originally, but baked caramel corn has been a standby treat for years. It is great for Superbowl parties, New Year's Eve, or family get-togethers.
Ingredients:
6 quarts popped popcorn (approx 1 c unpopped)
1 cup butter
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
Directions:
1. Preheat oven to 250 degrees.
2. Pop popcorn. Thoroughly coat a large roasting pan with cooking spray. Add the popped popcorn to the pan and set aside.
3. Combine the butter, brown sugar, light corn syrup, and salt in a 2 quart saucepan over medium-high heat. Stir constantly until the mixture comes to a boil. Remove from heat.
4. Stir in the baking soda and vanilla (mixture will bubble and foam). Pour caramel over the popcorn and stir until thoroughly coated.
5. Bake popcorn at 250 degrees for approximately one hour, stirring every 15 minutes. The caramel corn is ready when the caramel is no longer sticky.
