This is a baked apple recipe from somewhere (all I have is a photo-copied sheet) that I tweaked a little by adding some beer. The Oktoberfest style of beer is a sweet, easy drinking lager with strong caramel notes as a distinguishing factor, so it was ALMOST a no-brainer. Read more . For those of you a little nervous about adding a beer to your dessert, I urge you to try having a nice strong, roasty stout with your next bit of chocolate...or drinking an Oktoberfest while eating German Chocolate Cake (that's what got me).
Ingredients:
8 medium baking apples
1-2 tbsp lemon juice
1 c sugar
1/2 tsp ground cinnamon
1 c oktoberfest lager style beer, the sweeter the better. sly fox brewing makes a pretty good one....or you can brew your own
1 c packed light brown sugar
1/2 c all-purpose flour
1/2 tsp baking powder
1/3 c butter
Directions:
1. Peel, halve, and core apples. Sprinkle the cut edges with lemon juice.
2. Combine sugar, cinnamon, and beer in a large pot (make sure it's large, because the beer will foam up quite high on the hot break). Bring to a slow boil.
3. Add apples to the syrup, simmer until apples have absorbed much of the liquid. This usually takes about 20 minutes.
4. Meanwhile, combine brown sugar, flour, and baking powder. Cut in the butter. Set aside.
5. Place apples in a medium to large baking dish.
6. Simmer remaining liquid down to a syrup. Drizzle syrup over the apples.
7. Spoon butter/brown sugar mixture over apples and bake at 350F for 20-30 minutes, until topping is brown.
8. Serve as is or with cream...whipped or otherwise.
