Baked Brie Two Options

Warm gooey brie with a tangy topping in a pastry crust
Ingredients:

sheet of puff pastry
4 inch wheel of brie, or suitably sized wedge from a larger piece
dijon mustard (option 1)
' 1 c black berry balsamic (option 2), or 2/3 c balsamic and half a cup of black berries
Directions:
1. Trim the pastry so it'll fold nicely over the brie and seal, but before combining you have a decision to make.
2. Option 1:
3. If you want to go with mustard, smear the top of the brie with a nice heavy dose of mustard.

5. If you want to go for the blackberry balsamic, put the blackberry balsamic in a pan and cook down until nice, thick, and syrupy. You might want to add a dash of salt or sugar depending on starting ingredients.
6. If you're using regular balsamic and actual blackberries, crush the berries in the balsamic, cook down, then strain to remove seeds and pulp. Again, check salt and sugar.
7. Smear whatever option on top of the brie, and possibly add a little on the pastry under the brie.
8. Set brie on pastry, wrap, and bake at ~350 F until the pastry is golden brown.
9. Serve hot with sliced French bread (it should melt out nicely when cut and spread easily).
10. As always, I'm being very approximate here, adjust to taste.
