Baked Breakfast Burritos

Ingredients:
8 slices bacon
1 (4 ounce) can mushroom pieces, drained
6 green onions, diced
1/3 cup green pepper, diced
1 garlic clove, minced
8 eggs
1/4 cup sour cream
3/4 cup cheddar cheese, shredded
3 tablespoons taco sauce
1 tablespoon butter
4 large flour tortillas
Directions:
1. In a skillet , cook bacon until crisp, remove to paper towel to drain. Reserve 1 tablespoon bacon drippings.
2. In a bowl, beat eggs and sour cream. Stir in 1/4 cup cheese and taco sauce.
3. In a skillet, melt butter and egg mixture. Cook over low heat, stirring occasionally until eggs set. Remove from heat.
4. Crumble the bacon, Add to eggs with mushroom mixture.
5. Spoon down the center of tortillas, roll up.
6. Place seam down in buttered casserole dish.
7. Sprinkle with remaining cheese.
8. Bake at 350 for 5 minutes.
9. Serve with sour cream and taco sauce if desired.
