This was given to me by a friend of mine. Very simple and tastes great! Can skip the salt pork for a vegetarian version.
Ingredients:
1 lb dried navy beans or 1 lb dried great northern beans
1/2 teaspoon salt
1/4 lb salt pork, diced
1 cup onion, chopped
1/2 cup molasses
1/3 cup brown sugar
1 teaspoon dry mustard
1/8 teaspoon pepper
Directions:
1. Rinse beans and pick over.
2. Bring beans and 8 cups of water to a boil.
3. Reduce heat, simmer covered for 1 1/2 hours.
4. Pour beans and liquid into a bowl; cover and refrigerate overnight.
5. Drain beans, reserving 1 cup of liquid.
6. Place beans and reserved liquid in Crock Pot.
7. Stir in remaining ingredients.
8. cover and cook on low for 12 to 14 hours.
9. Stir before serving.
