I have been preparing this recipe for many years. My sons, daughter, and grandchildren really love it. My daughter, who visits for a week only once a year, enjoys it so much that I usually prepare it two times (double recipe) during her stay with us. She and her husband eat it every evening at dinner. The recipe is adapted from Southern Living.
Ingredients:
1 onion, chopped
1 tablespoon olive oil
1 (55 ounce) can baked beans (i use bush's original)
12 ounces ham, diced (i buy packaged diced ham)
1 (8 ounce) can tomato sauce
4 tablespoons dark brown sugar (add more to taste)
2 tablespoons worcestershire sauce (add more to taste)
1 tablespoon prepared mustard (add more to taste)
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. Saute onion in oil until onion is tender.
3. Find and discard fatty pork pieces in beans.
4. Combine all ingredients, including cooked onion, in a large mixing bowl. Stir until well blended.
5. Spoon mixture into a 4 quart casserole.
6. Bake uncovered until bubbly, approximately 40 minutes.
