A warm winter drink from mixologist Chris Raab of SB3 and Le Poisson Rouge in New York City.
Ingredients:
2 apples, slices
light brown sugar
3/4 ounce honey syrup
3/4 ounce lemon juice
1 ounce solera brandy
1 ounce calvados (or apple brandy)
cinnamon stick
hot water
apple, slice
Directions:
1. Sprinkle apple slices with sugar and quickly toast, sauté, or torch to heat the apples and lightly caramelize the sugar.
2. Muddle apples in a shaker with honey syrup and lemon juice.
3. Add brandy and Calvados and pour contents (including muddled apple) into a glass. Add a cinnamon stick, top with hot water, and garnish with a slice of apple.
