This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Granbury, Texas in 1987.
Ingredients:
4 large apples peeled quartered and cored
3/4 cup all purpose flour
3/4 cup granulated sugar
4 eggs
2 cups light cream
2 tablespoons sugar
sauce
1 cup firmly packed brown sugar
1/4 cup dark corn syrup
1/2 cup light cream
2 tablespoons butter
1/8 teaspoon salt
1/2 teaspoon vanilla extract
Directions:
1. Heat oven to 375 then grease shallow casserole dish.
2. Arrange apples in prepared casserole.
3. Lightly spoon flour into measuring cup then level off.
4. In large bowl combine flour and 3/4 cup sugar then add eggs and beat well.
5. Gradually add 2 cups cream then pour over apples and sprinkle with 2 tablespoons sugar.
6. Bake at 375 for 50 minutes.
7. In medium saucepan combine all sauce ingredients except vanilla.
8. Cook over medium heat until mixture boils stirring constantly then stir in vanilla.
9. Serve caramel sauce over warm custard.
