Baja Fish Taco Salad with Creamy Jalapeno Dressing

Directions:
1. For the fish, whisk:
2. c. yellow cornmeal
3. /4 t. ea. ground cumin and coriander
4. /2 t. ea. salt, pepper, and cayenne
5. Heat:
6. /4 c. canola oil
7. egg whites, beaten
8. T. water
9. lb. tilapia
10. For the salad, toss:
11. c. thinly sliced green cabbage
12. cucumber, diced
13. c. halved cherry tomatoes
14. /2 c. fresh cilantro
15. Cut fish into strips. Heat oil, dredge fish in the cornmeal mixture; dip into egg mixture. Roll strips into cornmeal mixture a second time. Fry fish in batches in hot oil until golden.

17. /2 c. mayo
18. /4 c. buttermilk
19. /4 c. scallions, chopped
20. jalapeno, seeded and chopped
21. t. lime juice
22. /2 t. ea. salt and cumin
