Bailey's Macadamia Nut Cookies

Soft and chewy, these cookies are perfect for anyone who likes Bailey's.
Ingredients:
1 c brown sugar, firmly packed
1/2 c (1 stick) margarine
1/4 c half and half
2 oz (.25c) bailey's irish cream
1/4 tsp rum extract
1 1/2 c unbleached all-purpose flour
1/4 tsp baking soda
1/8 tsp salt
3/4 c macadamia nuts, chopped
1/2 c powdered sugar
1 oz (2tbsp) bailey's irish cream
Directions:
1. Preheat oven to 350F.
2. Beat brown sugar and margarine with electric mixer on medium speed until creamy, scraping sides of bowl frequently.
3. Add Half & Half, Bailey's, and rum extract. Beat until well-blended.
4. Combine flour, baking soda and salt. Reduce mixer speed, add flour mixture until well-blended.
5. Stir in nuts by hand.
6. Drop by rounded spoonfuls onto ungreased cookie sheets. Bake 10-15 min, until lightly browned. Cool completely on wire rack.
7. Whisk together the powdered sugar and 2T Bailey's to make glaze. Drizzle over cooled cookies; let sit until glaze is set.
8. Makes approx. 36 cookies.
