Baileys Irish Ice Cream Cones

Ingredients:
**** ice cream
1 quart good quality vanilla ice cream ( thawed )
4 oz. of baileys irish cream
**** almond cones
* 2 eggwhites
* 1/3 cup sugar
* 1/3 cup flour, sifted
* 50g unsalted butter, melted, cooled
* 2/3 cup flaked almonds
Directions:
1. Blend the first two ingredients thoroughly and refreeze.
2. Preheat your oven to 200 degrees.
3. In a bowl combine the egg whites and sugar. Mix in the flour and the cooled, melted butter.
4. Stir in the flaked almonds.
5. Once the batter has been incorporated thoroughly, scoop 2 tablespoons of the batter onto a pre lined (with baking paper) cookie sheet..
6. Swirl it around with the back of a spoon till you get a large circle.
7. Place it in the oven for 7 mins. You may need a minute or two less depending on your oven..
8. Let them cool for one minute.
9. Using a flat spatula lift the biscuit from the tray and shape it into a cone. They are quite pliable when they're hot so move quickly.
10. They can be rested in champagne flutes or shot glasses to let them cool down and achieve their cone shape.
11. Repeat with the rest of the batter. The recipe should yield about four cones.
12. If you find they lose their cone shape as you make them, pop them back into the oven for about a minute to reheat and rework them into their cone shape.
13. Scoop the Baileys ice cream onto the cones (that have cooled) and drizzle with hard shell chocolate.
14. Serve with a shot of chilled Bailey's on the side!
