Delicious Cupcakes with a subtle hint of Baileys
Ingredients:
4 ounces caster sugar
4 ounces self raising flour (sieved)
4 ounces unsalted butter
2 eggs
1 teaspoon vanilla extract
1/2 cup bailey's irish cream
100 g chocolate (melted)
Directions:
1. Pre-heat oven at 180°C.
2. Beat Butter and Sugar together with an electric whisk until smooth.
3. Add 1 teaspoon of flour then 1 egg and fold into the mixture.
4. Add another teaspoon of flour then the second egg and fold inches.
5. Add vanilla extract fold into mixture with a wooden spoon.
6. Add Flour and Bailey's alternately, folding into the mixture.
7. Place mixture into cake cases and cook in a pre heated oven for 20-25mins.
8. Decorate the finished cakes with melted chocolate.
