This is a basic recipe for bagels. Add your own ingredients to put a personal spin on the recipe.
Ingredients:
4 1/4 to 4 3/4 cups flour
1 pkg. active dry yeast
1 1/2 cups warm water
1 tsp. salt
3 tbsp. sugar
1/2 cup cornmeal or semolina
Directions:
1. Preparing the dough:
2. In a large bowl combine 2 cups of flour and the yeast.
3. Add the water, sugar & salt.
4. Beat with a mixer on low to medium sped for 30 seconds. Beat on high for 3 mins. Stir in as much remaining flour as you can by hand. Turn dough onto gloured surface. Knead for 6-8 mins. (moderately stiff, smooth consistancy). Divide into 12 balled portions. Cover and let rest 10 mins. Grease a baking sheet.
5. Punch a hole into the center of each ball (you can use a shot glass)
6. Pull center of dough with fingers to make a 2 inch hole. Place on baking sheet; cover and rise for another 20 mins. (start timing when 1st bagel is shaped). While bagels are rising, boil 6 cups water in a 12 inch skillet. Preheat broiler.
7. Broil bagels 5 inches from heat for 3-4 mins turning once. Do not brown!
8. Preheat oven to 375.
9. Lower 6 bagels into boiling water. Reduce heat & simmer uncovered for 7 mins, turning once. Repeat with remaining bagels. Remove bagels and drain on paper towels. Sprinkle clean baking sheet with semolina. Place bagels on sheet and bake for 25 mins or until golden.
10. Add poppy seeds, dried herbs, sesame seeds, dried onion or garlic to dough or just to the tops before baking. (You can beat an egg and brush onto bagel before baking for a hard shiny coating)
11. Serve with cream cheese, or your favorite spread.
