Bacon-stuffed Cherry Tomatoes

This is a festive-looking appetizer that tastes as good as it looks! Present this on a lettuce-lined platter and sprinkle with finely chopped parsley.
Ingredients:
1 1/2 lbs. bacon, diced
1/2 cup finely chopped green onions
1/2 cup mayonnaise
24 cherry tomatoes
Directions:
1. Fry bacon until crisp. Drain and cool om paper towels.
2. In a medium bow, mix bacon, green onions and mayonnaise.
3. Remove stems from tomatoes and place them stem side down on cutting board.
4. Cut a thin slice off the tops.
5. With a small spoon or melon baller, scoop out pulp and discard.
6. Invert tomatoes on paper towels and let stand 30 minutes to drain.
7. Fill tomatoes with bacon mixture.
8. Cover and refrigerate several hours or overnight.
9. Makes 24 appetizers.
