I’ve told several people about this and some of them have said it doesn’t work. Well,,, that means it doesn’t work for them. It works every time for me so I reckon they are not doing it just right. The only risks here are that the pancakes will come out too greasy or that the bacon or sausage will not be cooked enough. Read more . Properly done these are a really great special breakfast. I will admit that it took me a couple of tries to get the shortening just right but, hopefully, you won’t have that problem if you pay attention to the guidelines below. Your pancake batter should be just medium thick. I really enjoy these with some fried green tomatoes on the side. You’ll find a recipe for those at Fried Green Tomatoes This recipe attracted some trolls but those who know about such things liked it and that’s what counts. The Hidalgo keeps after me to make these with escargot but that’s after he’s spent the day at the cantina. I have used lean smoked ham and that works very well. Enjoy.
Ingredients:
general
• one bowl of pancake batter, minus the shortening. use your own favorite or see below.
• 4 to 6 slices (to your taste) of smoked bacon, chopped pretty fine. you can also use any kind of sausage here, kielbasa, portuguese, summer, etc.; all finally chopped.
• 1 egg, cooked to your liking, per serving.
the batter
• 1 cup all purpose flour
• 1 cup buttermilk
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1 tbs sugar
• 1/2 tsp salt
• 1 egg
• 1 tsp vanilla extract (optional)
• 2 tsp shortening. you need to adjust this for the fat content of the meat you use. if you use 6 strips of fatty bacon you won’t need any additional shortening. the fat from the meat and what shortening you add should equal 2 tbs.
Directions:
1. 1. Cook the meat of your choice (until done but not crisp) with enough shortening to total 2 Tbs. I often do this in the microwave.
2. 2. While the meat is cooking mix up your batter, no shortening yet. See Photo
3. 3. When the meat is cooked allow to cool a little and add to the batter. If you think you have more than 2 Tbs of grease in the meat poor some off.
4. 4. Beat the meat/batter mixture thoroughly to make sure the shortening is well mixed in.
5. 5. I’m sure you know how to cook pancakes and these are no different than standard pancakes in that regard See Photo. The pancakes need to be well done and not doughy in the middle.
6. 6. Top each serving with an egg cooked to taste and serve. See Photo
7. Yes, I have used this meat/batter combo to make waffles and they come out great.
