Bacon Horseradish Potato Salad

Put some kick in your spuds and flip that traditional Tater' Salad into something much better!!
Ingredients:
4 slices of bacon
8 medium yukon gold or red potatoes......about 2 lbs
1/2 c mayo
1/2 c sour cream
2 tablespoons of prepared horseradish
1/2 teaspoon of freshly ground black pepper
salt to taste
4 hard boiled eggs, roughly chopped
4 scallions, chopped ( green stalk included )
2 sweet pickles, chopped
2 tablespoons of chopped pimentos
Directions:
1. Medium skillet fry bacon intil crisp, drain, and crumble into bits.
2. peel potatoes and cut into 1 inch cubes
3. place in large enough pot with enough water to cover and bring to boil.
4. reduce to moderate heat and cook until tender for about 10 mins.
5. drain and let cool.
6. In a large mixing bowl, combine mayo, sour cream, horseradish, pepper, and salt and stir till well blended
7. add the crumbled bacon, potatoes, and pimentos and toss until blended once again
8. cover with plastic wrap and chill until ready to serve.
