Bacon Egg And 3 Cheese Sandwiches

This idea just poppe in my head when I got up yesterday mroning, so, I did it...and we loved it. Will do again. The eggs were really light and very fluffy!
Ingredients:
4 jumbo eggs
2 heaping t sour cream
2 heaping t cottage cheese
1 t margarine or butter
1 handful shredded colby jack cheese
1 handful shredded cheddar cheese
salt and white pepper
6 pieces thick cut peppered bacon, cut in half and fried
1 large tomato, sliced
buttered toast
mayo
Directions:
1. Cut bacon in half and fry, lay on paper towel to drain (I cook mine on the foreman grill...easier, quicker, and clean up is minimal)
2. Whisk together eggs, sour cream and cottage cheese
3. Melt margarine in non-stick skillet
4. Scramble eggs using the pull and fold method to stay on sandwiches better
5. When they are almost set add salt and pepper
6. When eggs are set, sop with remaining cheese, remove from heat, and cover
7. Spread a little mayo on buttered toast, add eggs, bacon and tomato
