Bacon, Avocado & Tomato Salad

Ingredients:

  • 6 slices bacon
  • 3 tbsp oil
  • 1 tbsp vinegar
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 medium tomatoes , cut into 1/2-inch pieces
  • lettuce leaf , for serving (optional)

Directions:

  1. Fry bacon until crisp, drain & crumble.
  2. Mix oil, vinegar, salt, pepper & hot sauce & pour over avocados. Toss gently.
  3. Gently fold bacon, tomatoes and onion into avocados.
  4. Cover and refrigerate up to 2 hours.
  5. Serve on lettuce leaves.
