BACON AND ONION MUFFINS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.
Ingredients:
1/2 pound bacon diced
1/4 cup chopped white onion
2-1/4 cups unbleached flour sifted
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs slightly beaten
1/3 cup milk
1 cup dairy sour cream
1 tablespoon sesame seeds
Directions:
1. Fry bacon until crisp in skillet then remove with slotted spoon and drain on paper towels.
2. Sauté onion in 1 tablespoon bacon drippings until tender then set aside to cool.
3. Sift together flour, baking powder, baking soda and salt in large mixing bowl.
4. Combine eggs, milk and sour cream in small bowl then blend well.
5. Add all at once to dry ingredients stirring just enough to moisten.
6. Stir in bacon and sautéed onion then spoon batter into greased muffin pan filled 2/3rd full.
7. Sprinkle with sesame seeds then bake at 375 for 20 minutes.
8. Serve hot with homemade jelly or jam.
