A different egg salad for sandwiches. Ingredients:
6 hard-cooked eggs, peeled and chopped |
3 tbs finely minced red onion |
1/3 cup mayonnaise |
1 tsp prepared mustard |
1/4 tsp salt |
1/8 tsp pepper |
1/3 cup bacon, cooked and crumbled |
*original recipe calls for 1/3 cup diced celery. i never keep celery around and i prefer onion so i made this change. |
Directions:
1. In a bowl, combine the eggs, onion, mayonnaise, mustard, salt and pepper. Fold in bacon. Refrigerate any leftovers. |
