This is a simple appetizer that will get rave reviews. I have served them several times and I keep getting requests for more. It's a new twist on an old favorite.
Ingredients:
12 eggs, hard cooked
1/2 cup mayonnaise
1tbsp honey mustard
1/2 tsp salt
1/4 tsp pepper
4 strips bacon, cooked and crumbled
1/2 cup sharp shredded cheddar cheese
parsley for garnish, optional
Directions:
1. Hard boil eggs. Cool and peel.
2. Cut eggs in half, lengthwise.
3. Spoon yolks into a bowl and reserve whites.
4. Cook bacon and crumble.
5. Mash yolks with fork.
6. Add mayo, honey mustard, salt and pepper.
7. Fold in cheese and bacon.
8. Fill each half egg white with yolk mixture.
9. Cover and refrigerate until ready to serve.
