Bacon and Cheddar Mashed Potatoes

You'll make this recipe time and time again!! Tailor the flavors to suit your preferences by using Swiss Cheese instead of cheddar or proscuitto instead of bacon.
Ingredients:
2 1/2 lbs baking potatoes, cubed, peeled
1 cup extra-sharp cheddar cheese, shredded
1 cup 2% low-fat milk
1/2 cup green onion, chopped
2 tablespoons sour cream, reduced fat
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
4 bacon, slices cooked and crumbled (drained)
Directions:
1. Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.
2. Drain and return potato to pan. Add cheese and milk; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Add onions and remainiing ingredients, stirring to combine.
