These tasty bars would be great to grab on the way to school or work. Travel well for lunches, too! They are really low in fat, and their healthy ingredients make them a better choice than their purchased counterparts.
Ingredients:
3/4 cup firmly packed brown sugar
1/2 cup sugar
1 (8 ounce) container plain low-fat yogurt or 1 (8 ounce) container low-fat vanilla yogurt
2 egg whites
2 tablespoons vegetable oil
1 jar prune baby food
2 tablespoons milk
2 teaspoons vanilla
2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
3 cups oats (i used 1/2 quick and 1/2 old fashioned)
1 cup dried cranberries or 1 cup raisins
Directions:
1. Heat oven to 350*.
2. Mix sugars, yogurt, egg whites, oil, milk, prunes and vanilla.
3. Combine all other ingredients with these.
4. Mix all ingredients together.
5. Pour into 9 x 13 pan.
6. Bake at 350* for 25 minutes.
7. Cut into bars, store tightly covered.
