Ingredients:
2 cups cooked salt cod or fresh cod poached in white wine
2 cups mashed potatoes
1 cup garlic mayonnaise
1/4 cup good olive oil
eight slices of baguette
parsley for garnish
Directions:
1. Mix the cod fish, mashed potatoes and 1/2 of the garlic mayo.
2. Heat a black iron skillet over medium heat.
3. Form eight cod cakes with your hands.
4. Place the cakes in the skillet and fry until golden in color, flip over and cook the other side.
5. Meanwhile lightly toast slices of bread, coat with remaining garlic mayo.
6. Place a cod cake on top of each slice of bread and season with a bit of lemon juice and parsley.
