Baby Teething Cookies

I clipped this from the newspaper to pass along to my daughter for my teething grandson. I thought I'd post it here for other teethers . Sounds fairly healthy. Prep time does not include refrigeration time. Cooking time does not include the oven cooling .
Ingredients:
2 1/2 cups flour
1/2 cup nonfat dry milk powder
1/2 cup wheat germ
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 pinch salt
3/4 cup sugar
3/4 cup oil
1 egg
1/2 cup frozen orange juice concentrate, thawed
Directions:
1. Combine flour, dry milk, wheat germ, baking powder, cinnamon and salt in a large bowl.
2. Beat sugar and oil together in another bowl. Beat in the egg and orange juice at high speed, beating for 1 minute.
3. Slowly add the flour mixture to make a stiff dough.
4. Refrigerate for 1-2 hours.
5. Preheat oven to 375*. When ready to bake, place dough on a lightly greased cookie sheet and flatten. Roll the dough out to within 1 of the pan's edge.
6. Cut the dough into 2 x 3/4 bars (no need to separate).
7. Bake for 15 minutes, or until golden brown.
8. Remove from oven, and re-cut along the same bar lines.
9. Return to the oven, turn off the heat, and let sit in the oven until the oven is cool (this will crisp up the cookies).
