Baby Food - Tomato Butter

Ingredients:
1 medium tomato
4 fluid ounces tomato juice
1 ounce butter, at room temperature
1/2 tablespoon heavy cream
Directions:
1. Halve the tomato and place, cut side up, in a baking dish.
2. Roast at 450 F, for 20 minutes.
3. Puree the roasted tomato with the tomato juice, then strain.
4. Place in a small saucepan and bring to the boil over a high heat.
5. Reduce the heat and simmer for 10 minutes.
6. Just before serving, slowly add the butter and warm gently.
7. Finally, whisk in the cream.
