Baby Bokchoi And Avocado Salad

Ingredients:
dressing
olive oil 1/2 cup(2 t.)
rice vinegar 1/4 cup
white sugar 1/3 cup (i will cut back next time)
3 t. soy sauce
1 tsp. fresh ginger, grated finely
1 clove garlic, minced
1 tsp. toasted sesame oil
1 tsp. sriracha (i doubled)
combine all in a small jar, and shake well. let marry flavors an hour or 2.
6 baby bok choi s, slice in half lengthwise ( lightly steamed broccoli will sub well)
2 tablespoons red onion, chopped
2 avocados , diced
1/2 cup cashews (i omitted)
2 t. sesame seeds, black and white in a 350 degree oven, toast the nuts and seeds, checking and stirring every 4 minutes. ( i heated the oven to 370, and the sesame seeds were crisiped after about 8 minutes.
Directions:
1. refrigerate leftovers.
