This is an amazingly delicious dish. I found it in Juliano's Raw Uncook Book, and made a few modifications.
Ingredients:
1 chopped apple
1 clove garlic, minced
1 tsp minced ginger
1 c chopped tomatoes
1 c red bell pepper
2 c raw corn, cut off of the cob
1 c onion
2 cups fresh squeezed orange juice
sea salt and pepper to taste
Directions:
1. Mix all ingredients together.
2. Serve cold or at room temperature.
