AVOCADO SPINACH AND WALNUT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.
Ingredients:
1-1/2 tablespoons roughly chopped walnuts
8 ounces baby spinach leaves
1 ripe avocado peeled stone removed and sliced
juice of 1 lemon
Directions:
1. Place walnuts in small frying pan.
2. Cook over medium heat shaking frying pan until walnuts are golden and roasted.
3. Remove from heat then arrange spinach and avocado on serving plates.
4. Sprinkle over walnuts and drizzle with lemon juice then season with salt and pepper.
5. Serve immediately.
