I know it sounds weird, but this avocado smoothie tastes sensational. It's beautifully rich and creamy on its own, but the extra swirl of coulis turns it into a real dream. It's essential to use a perfectly ripe, buttery avocado that gives slightly when pressed gently. The precise quantity of milk will depend on the size of the avocado and how thick you like smoothies. As for honey, again the amount required is very much a matter of personal taste.
Ingredients:
1 ripe avocado, such as hass
240 -300 ml milk
1 1/2-2 tablespoons clear honey
strawberry puree
Directions:
1. Halve the avocado and discard the stone.
2. Scoop the flesh out with a spoon and drop it straight into a blender or food processor. Add the milk, honey, and 2-3 ice cubes.
3. Close the lid firmly and blend until smooth.
4. Pour into shot glasses.
5. Drizzle with a swirl of coulis and serve immediately.
