Ingredients:
2 avocados, diced
2 scallions, white part only, chopped
1 lemon, juiced
3 tablespoons olive oil
kosher salt
freshly ground black pepper
Directions:
1. Put the avocado, scallions, lemon juice, and oil in a medium bowl, and lightly toss. Season with salt and pepper, to taste.
