Ingredients:
2 avocado chopped
1 cup(s) red quinoa
1 med tomato chopped
1/4 cup(s) red onions diced
2 basil leaves crushed
1/3 cup(s) extra virgin olive oil
1/4 teaspoon(s) cayenne
1 clove(s) garlic minced
2 limes juiced
sea salt & pepper to taste
Directions:
1. In a small saucepan, bring two cups of water to a boil add rinsed quinoa. Cover and simmer for 15-20 min. Cool and set aside. Mix dressing ingredients together in a small bowl. Mix all other ingredients in a large mixing bowl & then add cooled quinoa. Toss with dressing, chill serve.
