Interesting Avocado salad and hummus pita
Ingredients:
4 pita bread rounds, halved
romaine lettuce leaf
tomato, slices
alfalfa sprout (optional)
hummus
2 large ripe avocados, coarsely chopped
4 large radishes, chopped
2 celery ribs, chopped
2 green onions, chopped
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1/2 teaspoon salt
1/4-1/2 teaspoon fresh ground pepper
Directions:
1. Spread 1/4 cup of Hummus inside each pita half.
2. Spoon Avocado Salad evenly into each half.
3. Add lettuce, tomato, and, sprouts.
4. Serve immediately.
